If you want to change the color, you can tap on the color palette icon next to it.Reading the other answers it is probably worth pointing out that the "adjust view" functionality allows you to increase or lower the size of the margins, giving you more space to annotate. This is not the tablet for annotating PDFs, you can't add extra pages or space for notes and it's very difficult to flip through pages..
